Most people file the Côte des Bar under "the southern bit of Champagne" and leave it there. This evening is an attempt to fix that.

Les Riceys sits at the far southern end of the region, closer to Chablis than to Reims. It is the largest commune by vineyard area in the whole of Champagne, spread across three villages, and it is the only place in France where three appellations sit on top of each other: Champagne, Coteaux Champenois, and Rosé des Riceys.

That last one is the odd one out. A still rosé, made only in the years that allow it, from a single village. There is nothing else like it in the region, and very little of it ever leaves France.

Champagne Alexandre Bonnet has worked here since 1932 and farms one of the largest holdings in the commune. Nicolas is coming up from Les Riceys to take us through the range across all three appellations, and to explain how a single village ends up producing three completely different things from the same slopes.
