Ayala, founded in 1860, is the anomaly of Aÿ: a house sitting deep in Pinot Noir territory that has built its wines around Chardonnay since the nineteenth century, when it was also among the first to push a drier style.

Aÿ's Chardonnay house in Pinot Noir country — dry before dry was fashionable, and quietly one of Champagne's best-value grandes marques.
Lovely floral aromatics of jasmine and citrus blossom, with yellow tones of white peach, lemon zest and a touch of grapefruit.
Genuinely charming. A Champagne that shows itself through grapefruit, wild strawberry and citrus zest.
A lovely nose of ripe yellow apples, citrus and stone fruit, held on a knife-edge between the fresh and the ripe.
A nose of light yellow citrus and green apple, with a touch of baked pastry behind.
A lovely, complex nose: mushroom in both its cooked and raw registers, candied lemon peel over clean citrus, brioche and a touch of demerara sugar.
A classic Blanc de Blancs, clean and elegant, with the Chardonnay speaking plainly.
A lovely Champagne showing rich fruit combined with the complexity that comes from time on lees.
