Bollinger, founded in 1829 in the grand cru village of Aÿ, is one of the very few great houses still in family hands after nearly two centuries.
Aÿ Pinot Noir, fermented in oak and aged under cork — Bollinger makes champagne like it makes wine.
A fantastically rich bottle. The nose is extremely concentrated, with lovely notes of caramelised apple, warm spice, lightly roasted coffee, vanilla, tonka beans and lemon curd, and alongside these come freshly baked brioche, browned butter and toasted yeast.
Rich in style, this shows big tones of ripe fruit and floral notes, running through ripe apples, baked lemon and red apple skin, with blood orange and grapefruit zest.
The nose is rich and gives a great deal of lovely fruit, with clean notes of yellow fruit, red apple skin and baked orange, and a light tone of warm spices and autolytic character alongside them.
A lovely tone of red apples and yellow orchard fruit, with minerals and light touches of baking spice, oak and toasted nuts.
